Cooking Loads of Vegetables

Recently I've started ordering vegetable boxes, so far I've ordered from Green Earth Organics but will probably try Bockety Box to spread the love. The idea was to just get a whole load o vegetables and figure out recipes for them. It helps take away the analysis paralysis I get when given almost unlimited choice. If I have a load of veg in my fridge that needs to be used I'll figure out what to do with it and I've been really enjoying it. For the latest one I thought I'd document what I cooked with a load of vegetables.

Roasted Potatoes & Kale

This is becoming a regular lunch for me, sometimes I'll have it with fried or scrambled eggs as well. It's really simple, toss the potatoes in oil, salt & pepper. For the kale I make a quick dressing with apple cider vinegar, olive oil & garlic. Roat the potatoes for about 20 minutes and the kale for 10 - 15 the combine it and add a few dashes of hot sauce.

I happened to see this on YouTube and though it looked delicious and it was. Here's the recipe. (Ottolenghi have loads of delicious sounding recipes on their site I'll be trying) I didn't use fresh tomatoes I used a can of good quality chopped tomatoes and swapped the sprigs of oregano(could not find fresh oregano in a shop here) for basil. For a side I roasted some of the tender stem broccoli™️ and drizzled it with a lemon juice, lemon zest & garlic thing. Also a bit of garlic bread, yes I know it's not authenticly Italian but it's delicious. Also taleggio cheese where have you been all my life?!
